1 lb. carrots
5/6 c. white vinegar
3/4 c. water
1 tsp cayenne
3/4 tsp. salt
1/2 tsp. mustard seeds
3 sprigs dill
3 cloves garlic
1. Heat and sterilize jars and lids and bring a water bath to boil.
2. Cut the carrots into thin sticks the come to 1/2" below the edge of your jars.
3. Prepare the brine with vinegar, water, cayenne, salt and mustard seeds. Bring to a boil.
4. Place dill and garlic into the bottom of the jars and pack with carrots.
5. Spoon the boiling brine into the jars, attach lids and place in water bath for 10 minutes.
